Its kinda hard to explain, but Self Hosting is kinda when you host the blog yourself rather than WordPress. Now the name is a bit misleading, as you do need a web host for your domain. You can self host with WordPress or other site providers, but you pretty much own your site. Its two things: a leap of faith and a a measure of freedom.

When a web host offers you e-commerce support, it usually means that you can install software on their account (example, an e-commerce framework like OSCommerce etc). You can then add your products and customize various pages etc. You'll have to set up your payment gateways too and that doesn't come out of the box.. you'll have to do it separately.
